Day 1: Hanoi (B,L)
Arrival in Hanoi. Meet and Greet at the airport and transfer to the hotel in downtown Hanoi. Sightseeing in Hanoi, a city of lakes, shaded boulevards and verdant public parks, includes famous sights; temple of literature, History Museum. Highlight of the city tour is a short walking tour in the Old Quarter, where we will enjoy a short walk through the Old Quarter of Hanoi to observe the daily life of the locals on busy markets and narrow shaded streets. Lunch at the restaurant of the Hoa Sua hospitality school restaurant, which is well for its delicious, French influenced Vietnamese dishes. The project Hoa Sua is a vocational training program for street kids. In the evening we will Cyclo ride to a welcome dinner at the Emperor, one of Hanoi's best fine dining in Vietnamese cuisine.

Day 2: Hanoi (B,L)
We will get up early in the moing (4 am) to walk to Bac Qua, the biggest vegetable market in Hanoi, which is open from 3 am to 5:30 am. This will be an amazing experience for us to see the hundreds of vegetable stores in the market, illuminated by candlelight. We will buy some vegetable for our cooking class later on. At 6 am we will be picked up and transfer back to the hotel, passing some parks where we can see locals doing Tai Chi - moving meditation. Back in the hotel we will have time to relax or can join the locals for a moing exercise. Transfer to the Sofitel Metropol Hotel to take a cooking class by one of the chefs of the hotel. The famous Vietnamese dishes we lea and cook by yourself today are: Lotus salad, fresh spring rolls, Moing Glory and Ca Kho To (fish in a clay pot). At lunch we will try our results. In the afteoon we visit the Museum of Ethnology, where you can lea about the ethnic diversity of Vietnam. Enjoy a Water Puppet Show in the evening.

Day 3: Hanoi - Ha Long (B,L)
We leave Hanoi at 8 am. Declared as a World Heritage site by UNESCO, Halong Bay is one of Vietnam's most spectacular natural attractions. Located about 200 km from Hanoi, the bay covers an area of more than 1500 square meters and is dotted with thousands of limestone islands, which rises from the clear green waters like sculptures crafted by the gods. Since the ancient days some of these islands have got names which due to their shapes, such as Banana Island or Tortoise Island. Thousands of these islands still remain unnamed and unexplored. The sea cruise includes a lunch with regional seafood specialties on board and will allow you to experience the majestic beauty of the Halong Bay.

Day 4: Ha Long - Van Giang village - Hanoi (B,L)
Drive back to Hanoi with a stop on the way to visit a ceramic making village. We will tu off to Van Giang village, a small village by the Red River, which is famous for its many different handicraft products. We will visit a local house, where we will lea how to cook some typical home dishes and have lunch there. We continue with a visit to the Chu Dong Tu temple, a very famous temple in the area, which is only about ten minutes driving from Van Giang village. Return back to Hanoi.

Day 5: Hanoi - Hue (B,L,D)
Transfer to the airport for the flight to Hue. Hue was the capital of Vietnam from 1802 to 1945 under 13 Emperors of the Nguyen dynasties. It is famous for its magnificent architecture with a citadel, several palaces, pagodas and royal tombs; built in a poetic surrounding on the banks of the Perfume River. And it is home to a remarkable tradition of Vietnamese Haute Cuisine. Check-in the hotel, then have a Cyclo ride to Tinh Gia Vien restaurant for lunch. This restaurant, which used to be home of a Mandarin in the Nguyen period, is specialized in the central Vietnamese cuisine. In the afteoon we will have a Cyclo ride to the Imperial city and Dong Ba market. In the evening we will enjoy a royal styled feast with dishes used to cooked for the Emperors only. The feast is accompanied with a royal music show.

Day 6: Hue (B,L)
In the morning you will go to the market with one of the chefs of the Huong Giang hotel to buy materials for the cooking class. Today we will learn how to cook some typical dishes from central Vietnam, also called Hue cuisine: Bun Bo Hue (Hue beef noodle), Xeo and Khoai cake and others. In the afternoon we will enjoy a boat trip on the Perfume River to visit the Thien Mu pagoda and the Emperors' tombs.

Day 7: Hue - Danang - Hoi An (B,D)
We drive to Danang with a photo stop on the summit of the breathtaking Hai Van Pass. Lunch in Danang. After lunch we will visit the Cham Museum before we are heading to Hoi An. On arrival, we will check-in a resort by the sea and have time to relax on the beach, until the guide picks us up for an amazing walk through the illuminated ancient part of the town. Dinner in an old house with local specialties.
Day 8: Hoi An (B)
In the morning we will learn how to cook some of the most famous regional dishes: White Roses, Hoanh Thanh, Fish in banana leaves and others. The cooking class will be held in the Hai Scout restaurant. For lunch we will enjoy our self-cooked food. In the afteoon you can relax on the beach or take an optional tour to My Son, a very famous Cham site and is one of two UNESCO Cultural Heritage sites in Vietnam. Overnight in Hoi An
Day 9: Hoi An - Da Nang - Saigon (B)
Drive to Da Nang airport for the flight to Saigon. In the afternoon we will enjoy a city tour and visit some of the most famous sights in Saigon: The Reunification Palace, once the symbol of the South Vietnamese govement and the War Remnants Museum, where we can lea more about the American War. We will stroll around the Ben Thanh market, then transfer back to the hotel.

Day 10: Saigon (B,L)
Saigon is the biggest and busiest city in Vietnam and also known for its excellent choice of restaurants. Saigon is home of several Vietnamese specialties, which we will learn to cook today: among others the famous Saigon Spring Roll. The class is taking place in the Vietnam Cooking Center. Day 11: Saigon - Vinh Long - Saigon (B,L)
Full day excursion to the Mekong Delta. We drive to Vinh Long and enjoy a boat trip along the rivers narrow waterways, overhung with dense vegetation. We will have the opportunity to try exotic fruits in one of the many orchards. For lunch we will be served with a local delicacy - an Elephant's ear fish. We continue with a visit to the Cai Be floating market and a snake farm in My Tho on the way back.
Overnight in Saigon
Day 12: Saigon - Phan Thiet (B)
In the morning we will drive to Phan Thiet, a small seaside town, which is traditionally known for its Nuoc Mam (fish sauce) and fishing industry. Phan Thiet is also famous for its beautiful beaches and nice resorts. Check-in to a resort, then time at leisure.
Overnight in Phan Thiet
Day 13: Phan Thiet (B)
Excursion to Phu Hai, a small village where Nuoc Mam is made. Nuoc Mam is a type of fermented fish sauce "instantly identifiable by its distinctive smell" without which no Vietnamese meal is complete. We will visit a family to see how they make the fish sauce continued by a boat trip on the Phu Hai river to see the fishermen at work. Return to the resort and time at leisure.

Day 14: Phat Thiet - Saigon (B)
Drive back to Saigon and time for shopping. Overnight in Saigon
Day 15: Depart Saigon (B)
